Peaches: the ultimate orb of summer. Give me bucketloads, give me crates, give me windowsills full of peaches and I’ll be happy. They maaaaaay just be my favorite summer fruit (I mean favorite fruit in general, come on), so of course I had to go and made giant gluten free peach muffins. With crumble topping. And a peach glaze. It’s summer in a muffin and I wish I could freeze a batch all year so that in December I could pop one out and feel that dusty late summer haze again. In the meantime, I’m just eating my fill of stone fruit and thinking up more peachy keen recipes. If…

Giant Gluten Free Mango Muffins
Get a load of these giant gluten free mango muffins, y’all!! Gut health has been, as you might imagine, a HUGE part of my life. Celiac basically requires it, so here I am, intimately in-tune with my digestive system, which means noticing exactly which foods and amounts of things will push me over the edge and make the intestine + stomach combo very displeased. One thing I’ve found in the last few years that really helps is regularity, and that includes consuming things that soothe my tummy (and taste great) every morning (starting off on the wrong spoonful of whatever is NOT a recipe for success). I actually go for…

Gluten Free Maple Pecan Granola
I started making this gluten free maple pecan granola for my dad because he would it granola every morning with his eggs for breakfast before he went off to work. As I’m sure you’re aware, granola, let alone gluten free granola, can be pretty spendy. Gluten free granola also tends to come in pretty small packages for its steep price. However, once I created this recipe, I can make a batch which fills a liter glass jar in our pantry and keeps us happy for about a month. I make this granola for gifts at the holidays, and always include a ziploc of it in the care package boxes I’ll…

Giant Costco Copycat Gluten Free Zucchini Muffins
Zucchini has been my ultimate veggie staple since sixth grade. Weird? Maybe. Sixth grade was a bumpy year: I was homeschooled that year because it was the *YEAR OF THE TESTS* – ie tons of medical stuff going on to figure out what the heck was wrong with me, why I had stopped growing, couldn’t gain weight, and had stomach issues constantly. Cue Celiac Diagnosis *enters stage right* – and that solved it! But before the diagnosis my mom was doing TONS of research to try and track down tests or diets or other dietary ideas that might alleviate my symptoms. We did a few months with no sugar or…

Gluten Free Red White & Blue Cupcakes
Tis the season for ALL of the red, white, and blue items you own to make their annual appearance, including these brand new gluten free red white and blue CUPCAKES! Thank goodness my friend Natalia asked if I could make a 4th of July treat this year because I realized I had absolutely no “patriotic” bakes on here – although I do consider lots of my bakes to embody the values and goodness of this nation. For example, these Black Lives Matter shortbread cookies, this rainbow pride cake, this trans pride cake, this BLM Swiss roll, these Juneteenth strawberry hibiscus cupcakes, or this black sesame cake commemorating Day of Remembrance…
