Gluten Free Maple Pecan Granola

I started making this gluten free maple pecan granola for my dad because he would it granola every morning with his eggs for breakfast before he went off to work. As I’m sure you’re aware, granola, let alone gluten free granola, can be pretty spendy. Gluten free granola also tends to come in pretty small packages for its steep price. However, once I created this recipe, I can make a batch which fills a liter glass jar in our pantry and keeps us happy for about a month. I make this granola for gifts at the holidays, and always include a ziploc of it in the care package boxes I’ll send down to Amelia (she is very happy when they come).

This gluten free maple pecan granola is super easy to make and not too sweet – I’ve come across too many granolas that taste like candy – a short list of ingredients and really fast to whip together. And even though I didn’t plan it, it’s also vegan! Gluten free rolled oats and raw pecans (I get big bags of them from Costco) are your base for this recipe. Coconut oil coats everything and prevents it from burning and maple syrup sweetens and flavors it while also creating the clumping factor that we want. Flaxseed meal is optional, I just like to include it because of the health benefits that come from it without an added taste.

Gluten Free Maple Pecan Granola

Ingredients

  • 3 Cups gluten free rolled oats
  • 2 Cups pecans chopped
  • 1/4 Cup golden flaxseed meal
  • 1/4 Tsp salt
  • 1/2 Tsp cinnamon
  • 1/2 Tsp vanilla extract
  • 1/2 Cup coconut oil liquid (melted to liquid)
  • 1/2 Cup maple syrup

Instructions

  • To start, preheat your oven to 275° Fahrenheit. Take your cookie sheet and line it with parchment paper and set aside.
  • To make your granola, mix together your oats, chopped pecans, flaxseed meal, salt, and cinnamon. If your coconut oil is solid, pop it in the microwave to liquefy it and pour it and the maple syrup and vanilla extract into your oat mixture. Once fully combined, spread out in a layer onto your parchment lined cookie sheet. Place it in your preheated oven and bake for 1 hour and 10 minutes (70 minutes).
  • When the timer is up, remove from the oven and allow to cool fully (usually 20-30 minutes). Then you can start breaking the granola up with your hands as it will be in huge pieces. Make sure it is fully cool before you store it away, and enjoy!
