Cinnamon chips! Whoever invented them was a gosh darn genius. Thankfully, I got to incorporate that genius into these giant gluten free cinnamon chip muffins and the results are OUTstanding, folks. Cinnamon chips are tiny baby baking chips (they look like chocolate chips but they’re made out of cinnamon and some other stuff). Mini Gluten Free Cinnamon Roll Pavlovas
These were definitely one of the messiest desserts I’ve ever made. So much so that I nearly thought the photoshoot was going to be one giant, dripping disaster. But they’re decent! And they taste fantastic. I’d never made cinnamon meringue before so was worried how it was going to turn out, flavor wise, but with a light cinnamon touch in the pavlovas themselves, and a heavier cinnamon glaze, it balances out. The cream cheese custard is perfectly satisfying – much heavier and creamier than the airy, marshmallowy pavlova, and creamier than the heavily-spiced glaze. A cinnamon roll is like a warm, buttery, sugary, comforting hug. For your mouth. Honestly, what a flavor combo: brown sugar, butter, cinnamon – just a bowl of that alone can instantaneously turn off all of the stress of another work-from-home-during-a-pandemic morning and transport you to a cozy, blanketed couch next to a roaring fire with a few dozen kittens napping peacefully at your side.
