It’s NOVEMBER 2021 y’all, can you believe it? Tis the season for everything cozy shmozy and comforting (at least in the northern hemisphere and in locales where winter actually feels different than fall). So here you go, the newest addition to the GIANT muffin train: these giant gluten free chocolate ginger muffins, complete with deep dark chocolate muffin and gems of crystalized ginger. It’s the ultimate chocolate + ginger combo so if you love both of those ingredients separately, you’re nearly-bound to love these. For those of you just joining, we started creating GIANT muffin recipes about 5 months ago after reminiscing over the giant Costco muffins we used to…

Gluten Free Black Cocoa Donuts
Tips for Delightful Baked Pumpkin Donuts: Use a piping bag to get the batter into your donut pans! This will streamline the whole process (it’s definitely tricky with a spoon), and will ensure that you have an even top and bottom to each donut instead of air bubbles or a wonky top/bottom. If you don’t have a piping bag, get a gallon-sized freezer zip top bag, scoop your batter into it, and then cut a 1/2 inch hole in one of the bottom corners of the bag! Don’t over-mix your batter! You can mix the wet ingredients more, but once you add the dry ingredients, take it easy. Mix slowly so that…

Gluten Free Chocolate Peanut Butter Cake
Chocolate + peanut butter, the love of a lifetime. This is, perhaps, my oldest and fondest flavor favorites. There’s something about the cozy, ultra-indulgent pairing of salty, crunchy (or creamy), nutty peanut butter with the richness of chocolate. So this gluten free chocolate peanut butter cake has been a dream for a looooong time. I’d had plans to make some extravagant layer cake celebrating my forever favorite, and just never got around to doing it. So, when a friend requested two small anniversary cakes, one for her (pineapple coconut) and one for her husband (chocolate peanut butter), I ran with it, made extra cake batter, and ended up finally making…

Giant Gluten Free Chocolate Orange Cinnamon Muffins
Anyone else have fond memories smashing spheres of perfectly-welded chocolate orange segments on the table every Christmas and then slowly eating each delicate slice? I have to admit, chocolate orange isn’t actually my favorite chocolate fruit combo, but there’s something deeply nostalgic about it and every once in a while I absolutely crave it. Which is why, for our next installment in the GIANT muffin series, I give you: GIANT gluten free chocolate orange muffins with an extra-cozy hint of cinnamon, and a deliciously-easy chocolate orange glaze (you’ll want to pour it on EVERYTHING, let me tell you). For those of you just joining, we started creating GIANT muffin recipes…

Giant Costco Copycat Gluten Free Chocolate Zucchini Muffins
This recipe is AGE OLD. I remember my mom making giant chocolate zucchini sheet cakes and covering them with her homemade fudge sauce when I was maybe 5 or 6 years old for any and every potluck or family event. It was hands down my favorite chocolate cake, maybe one of my favorite desserts (which, let me tell you, is a really difficult question to answer as a 5 or 6 year old – there are so many favorites!). I went on to make chocolate zucchini cakes for friends for their birthdays, especially for Christina who is the number one chocolate zucchini cake fan EVER. I even brought a ziplock…

Gluten Free Black Forest Cake
Black forest cake has always looked and seemed to me like one of the most fantastic cakes you could make. Maybe it’s all in the name: black forest at once sounds mysterious and other-worldly – almost like you’ll happen upon Galadriel taking a perfectly-delicate bite of a slice of this dark chocolate, whipped cream, and cherry creation. The elegance of that combination of flavors lends itself to a sophisticated, gorgeous cake fit for an elfin queen. Perhaps it’s more up Elrond’s alley, but even so, this has been on my list for ages and I’m thrilled that a special request from a friend finally got me to make it! So…

Giant Gluten Free Double Chocolate Muffins
For all of you waiting with baited breath for the next installment in the “Gluten Free Costco Muffin” saga, the time is now. I give you: the giant gluten free Costco copycat double chocolate muffin in all its chocolatey glory. It’s HUGE, it’s DOUBLE the chocolate, it’s fluffy and moist, and it’s dang easy to make which makes these the most dangerous chonky muffins out there. Each giant muffin is the equivalent of four regular-sized muffins, so be wary of the “I’ll just have two” urge that will wash over you once these come out of the oven. I finished making the first test batch of these just after 10pm…

Gluten Free Raspberry Chocolate Layer Cake with Chocolate Cream Cheese Buttercream
Is there anything better than a slice of gloriously-rich chocolate cake. Rhetorical, of course. This one was a particular stunner: four layers of the fluffiest, most decadent gluten free chocolate cake layers you’ll ever eat, filled with chocolate cream cheese buttercream (YES you heard that right – cream cheese frosting in CHOCOLATE? yes), raspberry puree + preserves, and bright raspberry whipped cream, and enrobed in more chocolate cream cheese buttercream, a rich chocolate ganache drip, and topped with gorgeous fresh flowers and raspberries. Just go ahead and let out that sigh of relief that it’s ALL GLUTEN FREE and serve yourself a second or third piece. One of the best…

Gluten Free Chocolate Caramel Pecan Tart
Currently looking for a boatload of friends who want to share this MASSIVE bottle of gorgeously rich 10 yo Tawny Port while indulging with a slice of this gluten free chocolate caramel and pecan tart because WOW I need to eat some real food and not just this glorious combo all day. But hey, it’s a heck of a way to start a Friday! This is our second collab with a brilliant wine-expert friend in Vienna, Austria, Iker Berasaluce (check out his Instagram here!!) pairing incredible wines with incredible gluten free desserts, and it does not disappoint. The first collab we did was bright, fresh, very citrusy, and AMAZING. Props…

Gluten Free Spumoni Cupcakes
Alright, who else has had spumoni ice cream before? I have this magical, hazy memory of getting it once (maybe I got it every time we went – who knows at this point) at Antonio’s – one of the three restaurants in “downtown” Eagle Point where we grew up. Eagle Point was a town of 5,000 when we moved there in 1998, though as a 5 year old the sense that it was the town the size of a pinhead didn’t really register (and Kendra was 2 so she definitely didn’t have a clue at the time). The downtown consisted of one street. Not like a city street that stretches…
