All hail the most EPICally indulgent treat I’ve made in ages: these gluten free triple chocolate cookies!! They’re big, they’re bold, they’re packed with my favorite cocoa powder, milk chocolate, dark chocolate, and have a secret ingredient that just shifts all of that good stuff up to an unbelievable level of YUM. These cookies were an unexpectedly successful baking adventure that was prompted by me realizing that I didn’t have any baked goods to give a friend I was meeting for drinks this week (looking at you, Matt!) and hastily drafting a recipe that would be fast, easy, delicious, and kid-friendly (chocolate always seems like a safe bet)! So thank…

Giant Gluten Free Oatmeal Chocolate Chip Muffins
These giant gluten free oatmeal chocolate chip muffins are the first new giant muffin recipe that I’ve made in months and it feels good to get back to the giant muffin tradition! The last 5 weeks have shaken me up quite a bit and I’m thankful for friends and family who have truly supported me through unexpected challenges and disturbing events. And through their support, I’ve been able to regain my energy for getting creative and doing activities that I love, like baking and food photography. If you’re feeling down or low on energy or emotionally drained, I’m sending you comfort and support and hoping that you can get back…

Giant Costco Copycat Gluten Free Cherry Chocolate Chip Muffins
Chocolate cherry is one of my favorite fruit + chocolate combos (check out this chocolate cherry cake for more). I used to really dislike that artificial cherry flavor – the one that’s packed into those cherry-filled chocolate truffles or just maraschino cherries on or in anything, but my taste buds seemed to have welcomed the flavor with open arms in the past few years especially. I’m now a HUGE maraschino cherry fan (these spumponi cupcakes were an absolute DREAM), and I just found out about cherry chip cake, which is apparently a popular flavor in the midwest? So I’ll be making that soon in cake or cupcake form. But cherries…

Giant Costco Copycat Gluten Free Chocolate Chip Muffins
The saga continues!! For those of you just joining, we’ve been at this Costco-Copycat muffin thing for a while now, and have spun up five other delicious recipes that hit the SPOT for those of us who have been missing those quintessential Costco muffins ever since going gluten free. For me, it’s been a solid 17 years since I last got to snag a tray of those bigger-than-your-face and unbelievably fluffy muffins, but I can now rest easy knowing I can make them at home whenever I want! (perhaps more dangerous than having to make the trip to Costco to get them!). So far we’ve got: giant banana nut muffins,…

Giant Gluten Free Double Chocolate Muffins
For all of you waiting with baited breath for the next installment in the “Gluten Free Costco Muffin” saga, the time is now. I give you: the giant gluten free Costco copycat double chocolate muffin in all its chocolatey glory. It’s HUGE, it’s DOUBLE the chocolate, it’s fluffy and moist, and it’s dang easy to make which makes these the most dangerous chonky muffins out there. Each giant muffin is the equivalent of four regular-sized muffins, so be wary of the “I’ll just have two” urge that will wash over you once these come out of the oven. I finished making the first test batch of these just after 10pm…

Giant Gluten Free Fudgy Brownies
Brownies. Need I say more? I need not, but I shall. When was the first time you remember experiencing the gloriousness of a warm, impossibly-dense, fudgy brownie? That moment of plunging into the chocolatey depths, only to resurface for a glug of cold milk or an extra spoonful of crisp vanilla ice cream. The rest of the world seems to melt away in that first bite – your peripheral vision compromised with visions of pools of melted chocolate chunks or in the velvety darkness of that center brownie piece. And then the satisfying chew of the caramelized edges. The most wonderful square you’ll ever eat. Brownies also happen to be…

Gluten Free Pumpkin Chocolate Chip Bundt Cake with Chocolate Ganache
October (at least here in the States) is all about pumpkins. A bit of a strange. American obsession, much like peanut butter or butting into Latin American governments or personal reusable water bottles or systemic racism. At least pumpkin, and pumpkin spice everything, is a bit more pleasant than some of those others. And with the christening of PSL (pumpkin spice latte) season upon us, we’re now getting to work developing all-new pumpkin recipes that are fun twists on classics or just straight up experiments that push the envelope of what pumpkin can be (the answer? everything). That humble, bulbous, vegetable is now the celebrity of an entire season, gracing…

Gluten Free Monster Cookies
These were, perhaps, the trickiest cookies I’ve made to date. I had a grand plan for creating some kind of “kitchen sink” gluten free cookie with pretzels and chips and chocolate chunks and, my favorite, chocolate/candy-covered sunflower seeds. I’d been planning to make these darn cookies for over a month, tinkering with the recipe idea on paper and waiting for ingredients to arrive, when I finally got the chance to make them this weekend. I optimistically tossed in all of the add-ins and, like most of my other cookie recipes, I chilled the dough in the fridge before baking. In the midst of an already-busy baking weekend, I missed my…

Gluten Free Banana Chocolate Chip Cupcakes
Anyone else remember the old Bananas in Pajamas routine? I have a vague memory of the “Bananas, in pyjamas, are coming down the stairs…” theme song and the animated intro, but after looking it up just now to refresh my memory, it seems I completely missed the actual show. Human-sized teddy bears and bananas have every-day adventures in brightly-lit homes and sunny backyards. The episode I happened upon was “Pink Spots,” a rather timely short about one of the teddy bears coming down with a case of, you guessed it, pink spots. Alarmingly, neither teddy bear was wearing a mask, and even after proclaiming “you must be sick, Morgan!” the…

Gluten Free Banana Chocolate Chip Bread
We may be late to the banana bread train (so many amazing loaves out there that we’ve seen during shelter in place), but it’s never too late for a good ol’ fashioned slice of this stuff. While I do adore traditional banana bread (who first thought “hey, I have a bunch of near-mush brown bananas, let’s put them in a quick bread!) and its roots in deeply homey, practical, and penny-wise baking, but there are a few twists that, for me, make some very excellent banana bread/cake. This particular recipe leans more towards cake than quick-bread (hence the nifty bundt pan instead of the loaf pan), and it’s hands down…
