Gluten Free Maple Glazed Donuts

For these gluten free maple glazed donuts we are giving a huge shout out to Simply Delish for this recipe inspiration! Full disclosure – we joined the Simply Delish affiliate program which essentially entails them sending us a box of their gluten/dairy-free pudding and jel boxed mixes every few months, and us coming up with recipes that involve those boxed mixes as an ingredient every month, so you’ll see a few other Simply Delish-inspired recipes on here once in a while! This one uses their vanilla pudding boxed mix (a good staple to have in the pantry!) and if you’re into it, use our specific link here to go check out their products, and use our 10% discount code SSGPUDDING to get 10% off of whatever you order!

Now I may usually prefer a good old-fashioned donut, but maple bars are such an iconic flavor that I couldn’t NOT make some! These gluten free maple glazed donuts are soft, fluffy, and chewy. Baked for lower fat and easy clean up. Topped with sugary, rich maple glaze that you will just keep licking off your fingers. Donuts are a quick and easy treat that ends up being perfectly portioned sized. These donuts are sure nostalgic to me; bringing back memories of getting $1 donuts out of the case at the grocery store.

Because of the maple extract in the donuts themselves – not just the glaze – our whole kitchen smelled like Sunday morning pancakes. It was mouthwatering! Going off of my previous plain donut recipe I replaced some of the flour with arrowroot starch to try and up the chewiness of these gluten free maple glazed donuts. The glaze is also quite easy to make, not even needing a stovetop, you can use a microwave to melt the butter and brown sugar together. Using thirty second intervals, stirring between each, it should take about two whole minutes to fully dissolve the brown sugar.

Equipment

  • Donut pans
  • Small saucepan

Ingredients

For the Donuts:

  • 1 1/4 Cups gluten free 1-1 flour mix
  • 1/4 Cup arrowroot starch
  • 1 Tsp baking powder
  • 1/3 Cup white sugar
  • 1/2 Tsp salt
  • 1/4 Cup SIMPLY DELISH Vanilla Instant pudding
  • 1/4 Cup milk
  • 2 Tbsp buttermilk
  • 2 large eggs
  • 1/2 Tsp maple extract

For the Glaze:

  • 2 Tbsp salted butter
  • 1/4 Cup brown sugar
  • 1 1/2 Tbsp heavy cream
  • 1 Tsp maple extract
  • 1 Cup powdered sugar
  • 1 Tbsp light corn syrup

Instructions

  • First, to make your donuts. Pre-heat your oven to 400°F. Mix up your instant pudding following the instructions on the box, set aside for later. Grease your donut pans and set aside. In a large mixing bowl combine flour, baking powder, sugar and salt. In a smaller bowl combine the instant pudding (or sour cream), milk, eggs, buttermilk, and vanilla. Add the wet ingredients to the flour mix and whisk thoroughly. You should have a thick batter. Spoon batter into a piping bag and pipe batter into the donut wells. Bake donuts for 10 – 12 minutes or until skewer comes out clean. Remove from oven and allow to cool completely.
  • Second, to make your maple glaze. While the donuts are cooling, combine the butter and brown sugar in a small sauce pan over medium heat.  Stir until the butter is melted and the sugar is mostly dissolved.  Remove from heat and add remaining glaze ingredients.  Whisk until smooth.  Dip baked donut tops into the glaze and set onto wax or parchment paper to allow the glaze to set up.
