Gluten Free Maple Glazed Donuts

Ingredients

For the Donuts:

  • 1 1/4 Cups gluten free 1-1 flour mix
  • 1/4 Cup arrowroot starch
  • 1 Tsp baking powder
  • 1/3 Cup white sugar
  • 1/2 Tsp salt
  • 1/4 Cup SIMPLY DELISH Vanilla Instant pudding
  • 1/4 Cup milk
  • 2 Tbsp buttermilk
  • 2 large eggs
  • 1/2 Tsp maple extract

For the Glaze:

  • 2 Tbsp salted butter
  • 1/4 Cup brown sugar
  • 1 1/2 Tbsp heavy cream
  • 1 Tsp maple extract
  • 1 Cup powdered sugar
  • 1 Tbsp light corn syrup

Instructions

  • First, to make your donuts. Pre-heat your oven to 400°F. Mix up your instant pudding following the instructions on the box, set aside for later. Grease your donut pans and set aside. In a large mixing bowl combine flour, baking powder, sugar and salt. In a smaller bowl combine the instant pudding (or sour cream), milk, eggs, buttermilk, and vanilla. Add the wet ingredients to the flour mix and whisk thoroughly. You should have a thick batter. Spoon batter into a piping bag and pipe batter into the donut wells. Bake donuts for 10 – 12 minutes or until skewer comes out clean. Remove from oven and allow to cool completely.
  • Second, to make your maple glaze. While the donuts are cooling, combine the butter and brown sugar in a small sauce pan over medium heat.  Stir until the butter is melted and the sugar is mostly dissolved.  Remove from heat and add remaining glaze ingredients.  Whisk until smooth.  Dip baked donut tops into the glaze and set onto wax or parchment paper to allow the glaze to set up.
