Gluten Free Chocolate Coated Baked Donuts

Now I made these gluten free chocolate coated baked donuts for a couple of reasons. Number one: I found a couple of brand new non-stick donut pans at my local thrift store, grabbed them, and quickly sprinted to the check out before I could change my own mind. Number two being that I wanted to recreate another one of my childhood memories. I remember stopping in at gas stations and my parents – when money was good – saying I could get ONE thing. I would usually go right to the little packages of 6 donettes by Hostess. I’d skip over the powdered sugar ones because who has time for that trainwreck, and go straight for the chocolate coated ones.

These gluten free chocolate coated baked donuts use my our basic cake donut base, and I made it as easy as I could because when donuts are on the line, who has time for complications. For the coating, I really do recommend using candy melts, as the chocolate has already been tempered and gives a nice level of hardness when they set up. If you use chocolate chips you’ll get donuts that melt all over your hands no matter how long they’ve set up and hardened. Also, using candy melts gives you a bit more creative leeway. They come in a multitude of different colors so you can drizzle and coat to your little artist’s heart’s content.

Gluten Free Chocolate Coated Donuts

Equipment

Ingredients

For the Donuts:

  • 3 1/2 Cups gluten free 1-1 flour mix
  • 2 1/2 Tsp baking powder
  • 1 Cup white sugar
  • 1 1/2 Tsp salt
  • 3/4 Cup SIMPLY DELISH Vanilla Instant pudding *can substitute Sour Cream
  • 3/4 Cup milk *or milk substitute
  • 1/3 Cup buttermilk
  • 5 large eggs
  • 1 1/2 Tsp vanilla extract

For Chocolate Coating:

  • 36 oz. chocolate candy melts

Instructions

  • Pre-heat your oven to 400°F. Mix up your instant pudding following the instructions on the box, set aside for later. Grease your donut pans and set aside.
  • In a large mixing bowl combine flour, baking powder, sugar and salt. In a smaller bowl combine the instant pudding (or sour cream), milk, eggs, buttermilk, and vanilla. Add the wet ingredients to the flour mix and whisk thoroughly. You should have a thick batter.
  • Spoon batter into a piping bag and pipe batter into the donut wells. Bake donuts for 10 – 12 minutes or until skewer comes out clean. Remove from oven and allow to cool completely.
  • Take your candy melts and melt them in a microwave safe bowl in the microwave using 30 second increments to stop and stir. Or melt them in a double boiler. Using a fork through the center hole of the cooled donuts, drop them one at a time into the melted chocolate and flip over to fully coat each side. Shake off any drips and then set onto wax paper to set and cool. The coating should harden back up within 30 minutes.
