These gluten free funfetti cookies are a huge triumph for me – they’re big, chewy in the center, crispy on the edges, with a fantastic crunch of sprinkles throughout (basically my ideal cookie)! I’ve had a low-level dread of coming up with new gluten free cookie recipes after countless attempts over the past 15 or so years that resulted in dry, crumbly, cakey, “gluten free tasting” (if you know you know) cookies. Now, to be fair, I have come up with a few recipes in the past three years, notably my absolute go-to hazelnut chocolate cookies, or these peanut butter sandwich (nutter butter) cookies, or these tahini chocolate chunk cookies…

Giant Gluten Free Oatmeal Chocolate Chip Muffins
These giant gluten free oatmeal chocolate chip muffins are the first new giant muffin recipe that I’ve made in months and it feels good to get back to the giant muffin tradition! The last 5 weeks have shaken me up quite a bit and I’m thankful for friends and family who have truly supported me through unexpected challenges and disturbing events. And through their support, I’ve been able to regain my energy for getting creative and doing activities that I love, like baking and food photography. If you’re feeling down or low on energy or emotionally drained, I’m sending you comfort and support and hoping that you can get back…

Gluten Free Mini Eggs Blondies
These gluten free mini eggs blondies are a revelation – not only are they the FIRST ever baked good I’ve made using Cadbury mini eggs, they’re also ridiculously easy, filled with indulgent browned butter, and are the perfect treat for Easter morning or for any sweet gifts you want to share with friends and family this weekend. They’re also the first thing I’ve baked back in my house in Oxford in over a month and it feels so incredibly good to get to be creative in the kitchen again. It’s certainly been a bit of a bizarre last 5 weeks with some really challenging and emotional experiences and decisions, so…

Gluten Free Filled Strawberry Cupcakes with Cream Cheese Buttercream
New recipe alert! Gluten free filled strawberry cupcakes with my favorite cream cheese frosting! It’s been a minute since I posted a new recipe here – it’s been a wild (and VERY positive) term here at Oxford and I haven’t been doing much recipe development! The past 8 weeks have been an absolutely whirl wind: falling in love, getting Covid (and isolating with the person I fell in love with), baking lots of stuff but mostly things I’d baked before (“comfort bakes”), working more on my PhD here at Oxford as I prepare for future field work, exploring more of the UK countryside with housemates, and now at the end…

Giant Gluten Free Chocolate Baileys Muffins
Wishing you all a wonderfully wintry December weekend up here in the Northern Hemisphere, and a gloriously sunny one down in the southern one. For those of you just joining, we started creating GIANT muffin recipes about 8 months ago after reminiscing over the giant Costco muffins we used to eat (read: devour) as kids prior to getting diagnosed with Celiac. This giant muffin saga has now consumed our every free moment (not really but it’s exciting) and we continue to create new flavors with gusto. Back to the rest of the giant muffins! So far we’ve made these giant poppyseed muffins, giant blueberry muffins, giant chocolate chip muffins, giant double chocolate muffins, giant banana…

Gluten Free Chocolate Bourbon Pecan Pie Bars
These have been proclaimed the house favorite by all three of my roommates out of all the things I’ve baked so far while living here in the UK. They’re THAT good. These gluten free pecan pie bars aren’t just any old pecan pie bars, they’ve got a buttery shortbread crust, they’ve got bourbon, they’ve got chocolate, and they’ve got a so much richness that you may just fall asleep after eating one. I wanted to make a pecan pie for our belated house Thanksgiving + early Christmas dinner that we put together last Friday in our little row house here in Oxford, but after pondering making a pie crust (something…

Giant Gluten Free Cornbread Muffins
Cornbread is one of those endlessly comforting foods, and something that I realized I missed tremendously after moving to the UK. Let me tell you, after talking through favorite classic Thanksgiving foods with my new roommates, we’ve all realized how much corn we Americans eat! We just had a belated Thanksgiving + early Christmas dinner in our house here and there we had giant and normal sized cornbread muffins (normal-sized ones coming soon to the blog), AND creamed corn (perhaps my favorite side of all time). Other favorite corn things that came to mind: cornflakes, corn fritters, corn on the cob, elote, hush puppies, corn tortillas, tamales, corn salad, popcorn,…

Gluten Free Chocolate Crinkle Cookies
These are a family favorite and one of our mom’s absolute most brilliant recipes – gluten free or otherwise!! In this case, these gluten free chocolate crinkle cookies are a dream and a half and perfect for the holidays or for a year-round treat. These have a bit of a new twist on them, with more cocoa powder (and dutched!) than in the original Mama Lynn recipe, which give them a deeper chocolate flavor and a bit of a chew reminiscent of macarons that I just love. They’re also some of the easiest cookies on the blog, so as long as you have a few hours (the dough does need…

Giant Gluten Free Pineapple Coconut Muffins
Happy summer in Northern Hemisphere November? Yes! It just snowed in Oxford and I am loving the winter wonderland vibes, but I also miss the comfort of a cocoon of warm sun in July and these muffins absolutely embody that. They’re giant gluten free pineapple coconut muffins and they’re darn magical: fluffy muffins packed with pineapple and with coconut extract, topped with literal pure sunshine in the form of a pineapple coconut glaze. If you’re already car-stuck-in-the-driveway deep in snow and are missing that summer sunshine, these will brighten up your kitchen, guaranteed. For those of you just joining, we started creating GIANT muffin recipes about 8 months ago after…

Giant Gluten Free Carrot Cake Muffins
These are a gosh-darn classic: giant gluten free carrot cake muffins with all the fixins! They’ve got carrots, pecans, walnuts, applesauce, golden raisins (golden! because I’m absolutely not a fan of the other ones), and coconut! The coconut adds a fantastic nutty, cozy flavor that rounds out the spices for the perfect fall breakfast or after school/work treat. They’re also some of the easiest giant muffins on the blog, so go ahead and do yourself a favor and make a batch or two. I’ve got to say, I’m usually not a huge fan of traditional carrot cake (read up on this long-time grudge in our vanilla almond carrot cake recipe…
