Pears seem to be the softest-spoken fall fruit: their swooping shape quietly elegant, buttery, just-sweet interiors perfect for cool, gentle fall days. I, at least, often forget about them while doing my weekly grocery shop. But they’re really a lovely fruit and deserve a generous moment in the sun. I’d seen lots of ideas for chocolate pear cakes and tortes, but had never tried the combination myself, so it seemed rather apt to create a new fall-flavored giant muffin that featured it. I can safely say that this is one of my favorite chocolate giant muffins, and the tenderness of the pear, both in flavor and texture, lends itself to…

It’s NOVEMBER 2021 y’all, can you believe it? Tis the season for everything cozy shmozy and comforting (at least in the northern hemisphere and in locales where winter actually feels different than fall). So here you go, the newest addition to the GIANT muffin train: these giant gluten free chocolate ginger muffins, complete with deep dark chocolate muffin and gems of crystalized ginger. It’s the ultimate chocolate + ginger combo so if you love both of those ingredients separately, you’re nearly-bound to love these. Gluten Free Black Cocoa Donuts
Tips for Delightful Baked Pumpkin Donuts: Use a piping bag to get the batter into your donut pans! This will streamline the whole process (it’s definitely tricky with a spoon), and will ensure that you have an even top and bottom to each donut instead of air bubbles or a wonky top/bottom. If you don’t have a piping bag, get a gallon-sized freezer zip top bag, scoop your batter into it, and then cut a 1/2 inch hole in one of the bottom corners of the bag! Don’t over-mix your batter! You can mix the wet ingredients more, but once you add the dry ingredients, take it easy. Mix slowly so that…

Gluten Free Pumpkin Donuts with Maple Glaze
Homemade donuts always intimidated me and honestly, they’re some of the easiest, most fun desserts you can make for friends and family! These gluten free pumpkin donuts, smothered in an insanely delicious maple cinnamon glaze and sprinkled with chopped toasted pecans, are no exception. Now, they may not be the floofy fried donuts we all know and love (there’s a donut shop just down the street where I used to live in San Francisco and booooy was it a struggle walking past it nearly every day, although none were gluten free so it wasn’t thaaaat big of a struggle), but they’re perfectly just-sweet, cakey, tinged with delicate glaze and crunchy…

Giant Gluten Free Toasted Coconut Muffins
I have a vivid memory of tasting my first coconut ice cream bar as a kid from the neighborhood ice cream truck: one of the dreamiest flavors I’d ever encountered and probably ever will. That revelation has lead me to try and recreate various different coconut treats through the years, and these giant gluten free coconut muffins are the most recent one. They’re fluffy, packed with heavenly coconut flavor, tons of toasted desiccated coconut, and absolutely covered in the most incredible coconut glaze. If you’re a coconut fan, these are the muffins you need to make this week (plus, they’re wildly easy to make!). If you’re looking for more coconut…

Giant Gluten Free Yuzu Muffins
Yuzu is an incredible citrus – with a flavor that tiptoes between meyer lemon and tangerine, with an indescribable floral note that makes this one of the most luxurious citruses to bake with. It’s a Japanese citrus, with a bumpy, round exterior and a lemony color. It’s gosh darn hard to find here in the states but you can certainly find things like yuzu juice, jams, and other products that make great additions to baking. These giant gluten free yuzu muffins are a celebration of the citrus, with a bit of extra help from lemons and tangerines in place of actual yuzu juice. We actually have one other yuzu bake…

Giant Gluten Free Chocolate Orange Cinnamon Muffins
Anyone else have fond memories smashing spheres of perfectly-welded chocolate orange segments on the table every Christmas and then slowly eating each delicate slice? I have to admit, chocolate orange isn’t actually my favorite chocolate fruit combo, but there’s something deeply nostalgic about it and every once in a while I absolutely crave it. Which is why, for our next installment in the GIANT muffin series, I give you: GIANT gluten free chocolate orange muffins with an extra-cozy hint of cinnamon, and a deliciously-easy chocolate orange glaze (you’ll want to pour it on EVERYTHING, let me tell you). For those of you just joining, we started creating GIANT muffin recipes…

Giant Gluten Free Lemon Saffron Muffins
Give us all the citrus! I recently returned from an absolutely wonderful vacation in France and Italy, and the final week was filled with incredible foods and citrus-centered dishes. I stayed with friends in Sicily, where lemons reign supreme and seafood is the freshest you’ll ever have. A few lemony stand outs: limone e sale, a typical Sicilian drink (especially on the east coast where we were) made of sparkling water, fresh lemon juice, and sea salt! Sounds weird, but it’s surprisingly refreshing – highly recommend. Another stellar find was an absolutely glorious scoop of lemon gelato at Caffè Sicilia (which, apparently, is a now a world-famous cafe thanks to…

Giant Gluten Free Lavender Earl Grey Muffins
Both of these flavors are some of the dreamiest out there, so be ready to drift off into a tea time daydreamscape of whimsical proportions. I am a HUGE tea drinker: I start off my day with a very large mug of black tea, usually English Breakfast, though my second go-to is earl grey, hence the penchant for these giant gluten free lavender earl grey muffins with perhaps my favorite glaze of the giant muffin series thus far. These giant muffins were born out of a longing for the similar lavender earl grey cupcakes I made for the first time last year (still one of my best recipes to date)…

Giant Gluten Free Peach Crumble Muffins
Peaches: the ultimate orb of summer. Give me bucketloads, give me crates, give me windowsills full of peaches and I’ll be happy. They maaaaaay just be my favorite summer fruit (I mean favorite fruit in general, come on), so of course I had to go and made giant gluten free peach muffins. With crumble topping. And a peach glaze. It’s summer in a muffin and I wish I could freeze a batch all year so that in December I could pop one out and feel that dusty late summer haze again. In the meantime, I’m just eating my fill of stone fruit and thinking up more peachy keen recipes. If…
