Peaches: the ultimate orb of summer. Give me bucketloads, give me crates, give me windowsills full of peaches and I’ll be happy. They maaaaaay just be my favorite summer fruit (I mean favorite fruit in general, come on), so of course I had to go and made giant gluten free peach muffins. With crumble topping. And a peach glaze. It’s summer in a muffin and I wish I could freeze a batch all year so that in December I could pop one out and feel that dusty late summer haze again. Pumpkin Saffron and Cardamon Crumb Cake
After trying a few modifications on Kendra’s pumpkin coffee cake recipe (which will be up here soon!), I ended up with a cake that was infinitely denser, a layer of crumb that could serve as a paperweight, and an eggy, almost pie-like center. At first slice, I deemed it a failure – but lo and behold, the texture and hint of sweetness was a resounding hit at the office! Peach + Plum Crumble
Crumble, crisp, cobbler, a rose by any other name would smell (and taste) as sweet, and while crumbles and crisps and cobblers are actually quite different, they all celebrate the caramelized glory of fresh fruit and buttery toppings in all forms and flavors. This peach+plumb crumble is no exception. Honestly, this one may be toeing the line between crumble and cobbler, though cobbler does specifically distinguish its topping from all the rest as “biscuit” dough, so I think we’re safe here with crumble. While this is a great way to add one final hoorah to stone fruit season, it can be done year round with frozen (and thawed) fruit options.…
