These muffins are DAMN good. They disappear nearly as fast as they come together, so making a second batch is highly recommended. My boyfriend absolutely adores banana chocolate chip bread, so these GIANT gluten free banana chocolate chip muffins are (I believe) his favorite of our giant muffins so far. Plus, they’re ridiculously-easy to make and they freeze really well, making these perfect weekday breakfast treats or emergency tough-day snacks that you simply pop in the microwave for instant, fluffy, studded-with-melty-chocolate-chips muffins! Plus, potassium! So there you go, they’re “healthy” too! For those of you just joining the giant muffin train, welcome aboard! This series of breakfasty/snacky treats started a…

Giant Gluten Free Banana Nut Muffins
Anyone else have those fond childhood memories of staring wide-eyed at tray upon tray of muffins bigger than your FACE at Costco? Well, even if not, I’m sure you could conjure up images of unimaginably large muffins, in varying flavors (the chocolate chocolate ones were always the biggest pull as a kid, though it was only for a special treat that we got those ones), usually sliced into quarters to mix and match or to actually be a reasonable sized-snack. Our mom used to run two separate girl scout troops for each of us growing up (still unclear how she managed both, plus working, plus finances, plus just being a…

Mini Gluten Free Banana Nut Loaves
When I was little, I remember trailing our shopping cart through Costco, delighted every time we passed (and stopped at) a sample table – getting to savor a bite of sausage or a cracker or a tiny cup of smoothie made with an on-sale blender. But the best part of those shopping trips were the muffins. If you’ve ever had a Costco muffin, you most likely have a similar nostalgia around these larger-than-life bakery flats. Because they were huge! At the time of first eating them, they may even have been bigger than my face – a muffin that, when cut into quarters, would more resemble a normal, homemade-sized muffin.…

Gluten Free Banana Chocolate Chip Cupcakes
Anyone else remember the old Bananas in Pajamas routine? I have a vague memory of the “Bananas, in pyjamas, are coming down the stairs…” theme song and the animated intro, but after looking it up just now to refresh my memory, it seems I completely missed the actual show. Human-sized teddy bears and bananas have every-day adventures in brightly-lit homes and sunny backyards. The episode I happened upon was “Pink Spots,” a rather timely short about one of the teddy bears coming down with a case of, you guessed it, pink spots. Alarmingly, neither teddy bear was wearing a mask, and even after proclaiming “you must be sick, Morgan!” the…

Gluten Free Banana Chocolate Chip Bread
We may be late to the banana bread train (so many amazing loaves out there that we’ve seen during shelter in place), but it’s never too late for a good ol’ fashioned slice of this stuff. While I do adore traditional banana bread (who first thought “hey, I have a bunch of near-mush brown bananas, let’s put them in a quick bread!) and its roots in deeply homey, practical, and penny-wise baking, but there are a few twists that, for me, make some very excellent banana bread/cake. This particular recipe leans more towards cake than quick-bread (hence the nifty bundt pan instead of the loaf pan), and it’s hands down…
