Food is a love language. And in the full spirit of Valentines Day, here is a pan full of the most decadent love language gluten free brownies around: jammy (with actual cherry and raspberry jam), bright with fresh strawberries, and deeply, darkly chocolate with, well, chocolate. Lots of it. I usually just toss together a quick pan of plan brownies (which are, by themselves, pretty darn wonderful too, so no need to add the topping here), and serve with a scoop of vanilla ice cream, but this week felt like it needed a bit of extra love, berry-style. It just so happened that I had two jars of my new favorite jams – tart cherry preserves and raspberry, so of course giant globs of both ended up dotting the top of the brownie batter. If you haven’t noticed, I’m very into jam in baking and if you are too YAY and check these out: Lamingtons – with jam, of course, Peanut Butter & Jelly Bars, Marionberry (jam) and Hazelnut Swiss Roll. Speaking of which, jam is totally a love language of its own – looking at you, Joey from Friends.
Brownies are one of the saving grace baked goods of the gluten free world. Heck, of any specific-diet world. Throw in black beans, kale, spinach, applesauce, avocado, you name it, and still, chocolate beats it all into submission, the perpetual grand champion of anything that comes out of an oven. You can even take out flour altogether, gluten free or not, and still have one of the most luxurious, intoxicating desserts known to humankind. That’ll have to be another gluten free recipe down the line – the perfect flourless chocolate torte.
These brownies will be the thing that convinces your coworkers that gluten free CAN actually taste good (little to they know, there’s actually a lot that’s great and gluten free), the gateway dessert for the non-gluten free world. Once you hook your relatives or friends on truly tasty gluten free treats, there’s no going back. They’ll be your new baking cheerleaders, excitedly sharing the news that gluten free is good, as long as you have at least one handy gluten free brownie recipe! with all of their friends and coworkers. And thus we, the gluten free folk, take over the world. It’s happening, my friends, one brownie at a time.
Gluten Free Jammy Strawberry Brownies for Valentines Day
Equipment
- 9×13 inch pan
Ingredients
- 3 Cups chopped dark and milk chocolate good quality like Valrhona or Scharffen Berger
- 1 1/2 Cups salted butter melted
- 2 1/2 Cups white sugar
- 4 large eggs
- 4 tsp vanilla extract
- 1 1/2 Cups gluten free flour 1-1 mix with xanthan gum
- 1/2 Cup good quality cocoa powder
- 2 tsp salt
- 3/4 Cup cherry or raspberry jam or a mix of both
- 2/3 Cup quartered strawberries
Instructions
- First, preheat oven to 350° Fahrenheit. Lightly grease a 9×13 inch pan, line with parchment paper and grease again, then set aside. Chop chocolate into small pieces and, in a heat-proof bowl, melt 1 1/2 cups of it in 45 second intervals until smooth and melted. Separately, in a large bowl, beat the butter and sugar together until lighter and fluffy. Add the vanilla and eggs and beat until smooth. Slowly pour in the melted chocolate, stirring quickly until fully combined.
- In a medium bowl, whisk together the flour, cocoa powder, and salt, then dump into the chocolate mixture and fold together with a spatula. Once combined, dump in the rest of the chopped chocolate and stir carefully until combined. Pour batter into the pan and spread to the corners until even.
- Stir your jam so that it's easy to drop in tablespoons onto the unbaked brownies. Drop jam in pools across the brownies and then use a toothpick or skewer to spread the jam in patterns. Then, place strawberries over the jam in whatever pattern (or random spray) you like.
- Bake at 350° for 30 minutes, then lower the temperature to 325° and continue to bake for another 30 minutes or until nearly the entire brownie pan is solid (there will still be a slight jiggle in the center which will set when they cool). Let cool for at least 15 minutes before serving.
